Hanoi cooking school

There are three different cuisines in Vietnam. The North, with its four seasons, will offer a country-style cuisine, using vegetables and herbs and freshwater fish.

EZ COOKING SCHOOL

This professional school is for both local people and foreigners as they are close partner with some shows on TV. Choosing EZ School to learn some Vietnamese dishes that will be cooked afterward at your home

The normal course at the school will be long around 5hours (half day in morning) that is inclusive local market visiting (Chau Long or Thanh Cong market) with chef, hand-on 3 dishes cooking then feast

The typical Vietnamese menus for learning:

  • Vietnamese Spring Rolls or Fresh Spring Rolls
  • Charcoal Grilled Pork with Vietnamese Noodle
  • Pho served with chicken/pork
  • Thang Long Grilled Fish
  • Rice pancake folded in half (and filled with a shrimp, meat and soya bean sprouts)
  • Boneless chicken and lotus bean, green rice flakes rolled with lotus leave, stewed and fried

VERTICLE – HOME COOKING

Discover fusion cooking, between East and West, with the Chef Didier Corlou – the chef at Metropole Legend Hanoi hotel, he is famous with passion in nuoc mam (fish sauce). What he has learned from his thirty-year worldwide experience and from his own development of techniques is that the creation has to respect the minorities’ cuisine, but also to be associated with the environment and the ground’s biology, the culture, the fishing and the seasons...

However, the highlight is his wife: Mai Corlou with traditional Vietnamese cooking in her house.

The typical traditional Vietnamese menus for learning:

· Vietnamese banana flower salad

· Hanoi nem (deep fried spring rolls)

· Grilled chicken with lemon leaves

· Bun cha

· Sautéed pumpkin branches

OLD HANOI

Old Hanoi provides the very best and most authentic Vietnamese food in the capital by setting truly Hanoian in style.

Daily Classes start in tropical garden quarter then walk to market to discover the ingredients and watch the locals pick their daily food and haggle over the price. Feel free to join in the process and have a go at haggling with the help of your chef. Cook then feast your amazed created dish.

The typical Vietnamese menus for learning:

 

· Fresh spring rolls with pork and shrimps

· Grilled chicken on skewers with lime leafs

· Steamed fish wrapped in lotus leaf with tamarind juice

· Logan stuffed with lotus seeds

HIGHWAY 4

Highway4 offers private cooking classes that focus on an active participation. During the class itself you will be provided with your own workstation as you enjoy the challenge of producing Vietnamese foods.

The cooking class starts with local market visiting by cycle then takes part in hand-on cooking class with chef for 3 dishes. The program is normal without any specialty.

The typical traditional Vietnamese menus for learning:

  • Saigon fried pork spring roll
  • Fish simmered in fish sauce in Clay Pot
  • Beef sautéed in black sauce

VAN GIANG VILLAGE COOKING

This is great chance to discover and learning about rural of Vietnam as well as farmers’ life style in countryside. The course will start with strolling around rural market that holds in green field or along the tranquility road.

Fair is one of typical culture of Vietnamese and wet-rice civilization is pride for the land so, cooking demonstration at ancient house in the village should not be missed if you really love to deeply discover the Vietnam. You can also take part in Vietnam folk song show (Ca Tru or Quan Ho fork song) at the village.
