Goi Oc Dang



In Mekong Delta, there are a lot of bitter snails that are very easy to find on the fields, rivers, canals round the year. Just simple wade in canals, ditches with a basket in one hours, you can catch some kilos snails to make Goi Oc Dang (raw bitter snail with vegetable). This is a very exciting rustic food.

Just simple wade in canals, ditches with a basket in one hours, you can catch some kilos snails to make Goi Oc Dang (raw bitter snail with vegetable). This is a very exciting rustic food.

Bitter snails are cleaned mud , soak for several hours with rice water for releasing residue, slime in the mouth, bringing to  clean and then put in pot to boil with a littlelemon grass leaves, guava leaves for fragrance, about 10 minutes later you see snails shed, poured out basket, drain, using hard toothpicks , sharp thorns to get gut out and put in a bowl (If you want fast food, you can soak the basin snails bitter water with vinegar mix).

Xiem banana flower and Hot banana flower  finely chopped and soaked, squeeze a piece of lemon to make banana  pale white, not black. Then, lightly squeeze the banana drain, sprinkle a half cup of vinegar in the salad , a few pieces of garlic, peppers and less seasoning. Put snail gut to mix with banana flowers salad and thinly sliced boiled pork skin. Scratte on the salad a little herbs and finely roasted peanuts.  It will be so exellen if you have thinly sliced boiled bacon, thinly around the salad!

Pick  snails salad with herbs such as basil little slip, cinnamon, fragrant knotweed, put with chili garlic sauce for a meal, or sip a little wine with delicious sticky. Enjoy!
